Oregano-dusted chicken breast with bacon and swiss cheese

Ingredients:

2-3 tablespoons olive oil
oregano to taste
1 chicken breast
3 slices thick cut bacon
sliced Swiss cheese

Heat olive oil in deep skillet on medium-high heat.
Sprinkle oil with oregano.
Add chicken breast; cover with slightly askew lid. Cook on each side until slightly browned.
Lower heat and cook an additional 10-15 minutes, flipping half way through.
Cook bacon in microwave for 3 minutes or until desired crispness is reached.
When chicken is almost cooked through, butterfly the chicken breast. Place center side down back in pan.
Add strips of bacon, then top with sliced Swiss cheese, and dust with a bit more oregano.
Replace lid until cheese is melted.
Serve with a side of clementine slices and pecans, dusted with cinnamon.

Why I’m an early riser

Most of my friends know that I’m, well, an early riser. That is probably putting it mildly. I like to bolt out of bed well before the crack of dawn. Usually sometime between 3am and 5am my eyes pop open. I used to fight it, cover my head with the pillow, toss and turn and try to fall back asleep. But one day, I decided not to even try fighting it. Resistance is futile and all that. So I soundlessly slipped out of bed. That morning, my perspective on life changed forever.

There is something profoundly sacred about the dark stillness of those early hours. The ritual of turning on some soft instrumental music, brewing my espresso, mindfully munching a handful of raw almonds. My movements are serene, unhurried, peace-filled. Every cell of my body is connecting with Spirit, opening with willingness to the possibilities that may be unfolding that day, and – most importantly – opening to what I’m being called to BE, DO or EXPERIENCE in this day. Sometimes, I don’t even see the day dawning as the light rises around me. Until suddenly I realize morning has broken. Always, though, I feel it. I feel the awakening of the day coursing through my veins as I move toward what it is I desire to create in my life, in every area. I sit, still, looking through my vision board book, reading my Personal Plan for the year, or simply outlining on paper my goals.

I know that rising “in the middle of the night” as some loved ones have referred to my habit isn’t for everyone. I also know that if you choose to rise just 10 minutes earlier, you can profoundly change the course of your life and the level of prosperity in your life.

Leo Babauta (zenhabits.net) wrote one of my favorite reasons for getting up early….Goal time. Here’s what he had to say about this topic:

“Got goals? Well, you should. And there’s no better time to review them and plan for them and do your goal tasks than first thing. You should have one goal that you want to accomplish this week. And every morning, you should decide what one thing you can do today to move yourself further towards that goal. And then, if possible, do that first thing in the morning.”

Start there, in that singular place. One goal. Ten minutes. Rise up…

The desire to lash out swirls with the desire to extend love and move through the transition with ease and grace. As in most high-conflict situations, there are opportunities in each moment to come from a place of love or come from a place of fear. It’s a fine line and one that often seems hard to balance, especially when our own buttons get pushed. One thing that I’ve found makes it easier to stand in love even in the midst of a high conflict situation is to look at the entire situation from a child’s perspective.

One of my favorite books as a child was Pippi Longstocking by Astrid Lindgren. In 1978, Astrid accepted a peace prize in Germany and in her acceptance speech, she shared this story:

“When I was about twenty years old, I met an old pastor’s wife who told me that when she was young and had her first child, she didn’t believe in striking children, although spanking kids with a switch pulled from a tree was standard punishment at the time.

“But one day when her son was four or five, he did something that she felt warranted a spanking–the first in his life. And she told him he would have to go outside and find a switch for her to hit him with. The boy was gone a long time. And when he came back in, he was crying.

“He said to her, ‘Mama, I couldn’t find a switch, but here’s a rock you can throw at me.’ All of the sudden a mother understood how the situation felt from the child’s point of view: that if my mother wants to hurt me, it makes no difference what she does it with; she might as well do it with a stone.

“The mother took the boy onto her lap and they both cried. Then she laid the rock on a shelf in the kitchen to remind herself forever: never violence.”

Violence – whether in thought, word or deed – breaks our spirits. We have a choice in each and every moment. Do we want to break someone’s spirit or enrich someone’s spirit? Our ego would chose the former. Today, I encourage you to let your Spirit make the choice instead.
